Pasilla Bajio, also known as Chile Negro or Mexican Negro, is a traditional Mexican variety prized for its rich, complex flavour. The name “Pasilla,” meaning “little raisin,” refers to the chilli’s transformation from dark green to deep brown with a slightly wrinkled, raisin-like appearance when fully mature and dried. Growing up to 1 meter tall, this versatile plant thrives in both pots and open ground.
