Numex Big Jim, once a Guinness World Record holder for its exceptionally large pods, was expertly bred by Dr. Nakayama at the Chile Pepper Institute of New Mexico State University. Though the plant itself remains relatively compact, it produces massive pods measuring 20 to 24 cm in length and up to 5 cm in width. These peppers ripen from a bright green to a bold red, making them perfect for stuffing or adding a colourful, mildly spicy touch to salads.
